CHICKEN CHILI 
6 tbsp. olive oil
1 lg. yellow onion, chopped
5 cloves garlic, minced
2 red sweet peppers, chopped
4 jalapeno peppers, chopped
6 whole chicken breasts, 1 inch cubes
2 (16 oz.) cans crushed tomatoes
3 tbsp. chili powder
1 1/2 tsp. cumin seeds
1 tsp. ground coriander
Pinch of cinnamon
1/4 c. grated unsweetened chocolate
8 oz. black olives, sliced
1 c. beer

Heat 3 tablespoons olive oil. Saute onions and garlic for 5 minutes. Add red and jalapeno pepper and saute for 10 minutes. Stir in spices and cook for 5 minutes. Remove from heat; brown chicken separately with 3 tablespoons olive oil until just cooked through. Add chicken, tomato, olives, and beer to onion and spice mixture. Simmer for 15 minutes. Stir in chocolate. Season to taste with salt. Serve with sour cream, cheddar cheese, scallions, and avocado in separate bowls as garnish.
