LEMON PEPPER STEAK 
2 lbs. grated lemon peel
3 tsp. cracked black pepper
1 1/2 tsp. salt
1 beef top round steak, 1 1/2 inches thick
2 garlic cloves, minced
1/2 stick butter, softened

Preheat broiler. In small bowl, mix lemon peel, pepper, salt, garlic, and soft butter. Set aside.

Place beef on rack in broiling pan. Spread half lemon pepper over top of steak. Place pan in broiler at closest position to heat; broil steak 8 minutes. Turn steak; spread with remaining lemon pepper butter; broil 8 minutes longer. This will be a medium-rare doneness.

Slice steak across grain into thin slices. Pour juices from broiling pan over meat in serving dish.
