10 lbs. potatoes 2 lbs. carrots 2 lbs. turnips 2 lg. onions Season salt Salt Pepper PASTRY: 6 c. flour 1 lb. lard 1 tbsp. salt Approximately 1 c. very cold water 1 egg, beaten Make pastry - Cut lard into flour and salt. Slowly add water to make a firm dough that pulls away from bowl. DO NOT OVER HANDLE. Refrigerate while mixing up filling. Peel and cube potatoes. Peel and grate carrots, turnips and onions. Add seasonings to taste. Roll out small ball of dough into about 12-inch circle. Place heaping cup of filling on dough. Bring up dough and pinch edges. Brush with beaten egg. Bake at 350 degrees about 1 hour, or until soft when tested. |
