PARTRIDGES A LA MESONERA 
6 partridges or Cornish hens
1/4 c. flour
2 cloves
Salt and pepper
Tarragon
2 lbs. sm. white French onions
1 lb. Spanish onions, finely chopped
1/4 lb. butter
1 lb. carrots, chopped
1/4 lb. turnips, finely chopped
1/4 lb. salted ham
1/2 pt. fine oil
2 pts. white wine
1 tumbler sherry
2 pts. tomato sauce

The partridges are floured and put in a large oven dish with the seasonings, small onions, chopped onions, butter, carrots, turnips, salted ham, and oil. Cook in the oven for 30 minutes at 350 degrees. Add wine, sherry, and tomato sauce; cook for 1 1/2 hours, uncovered. If any of the partridges are still tough, add a little stock and continue cooking.
