MEREDITH'S MOM'S SWEDISH
MEATBALLS
 
1 1/2 lbs. ground beef
1 lb. ground veal
1/2 lb. ground pork
3 c. soft bread crumbs (6 slices)
2 c. half and half
1 c. chopped onion
2 tbsp. butter
2 eggs
1/2 c. finely chopped parsley
1 tbsp. salt
1/2 tsp. ginger
2 dashes pepper
2 dashes nutmeg
2 dashes allspice

1. Have meat ground together twice.

2. Soak bread in cream 5 minutes.

3. Cook onions in butter (not brown).

4. Combine meat, crumb mixture, eggs, onion, parsley and seasonings.

5. Beat mixture vigorously 5 minutes on medium speed of mixer.

6. Chill.

7. Form 1 1/2 inch balls (wet hands to roll).

8. Brown on cookie sheet 30 minutes at 350 degrees.

9. Keep juice to store and freeze or reheat.
