COTTAGE PIE 
2 tbsp. butter
1 lb. ground beef
1 med. onion, chopped
1 med. size green pepper, chopped (optional)
2 c. instant mashed potatoes
1 tsp. salt
1/4 tsp. pepper
1 c. (4 oz.) shredded cheddar cheese

Melt butter in medium skillet over medium heat; add beef, onion, and green pepper, if desired. Cook until beef is no longer pink and onion and green pepper are tender. prepare mashed potatoes according to directions on package; season with salt and pepper. Spoon meat mixture into 1 1/2 quart baking dish. Cover with thick layer of potatoes; top with cheese. Bake at 350 degrees for 20 to 25 minutes, or until heated through and cheese is melted. Yield: 4 to 6 servings.
