Preheat oven to 375 degrees. In large bowl cream 1/2 cup shortening and 1 cup sugar. In a small bowl beat well 2 eggs and add 1 jar 7 1/2 ounces junior banana babyfood and 1 teaspoon lemon juice. Sift together 2 cups all purpose flour, 3 teaspoons baking powder and 1/2 teaspoon salt. Add sifted ingredients to creamed mixture alternately with egg mixture. Add 1 teaspoon banana extract and 1/2 cup chopped nuts. Spoon batter into 9 x 5 x 3 inch loaf pan, well greased and floured. Bake for 1 1/4 hours. Makes one 9 inch loaf.
