COOL PEACH PIE 
1/2 lb. vanilla wafers
1 c. + 1 tbsp. powdered sugar
1/4 c. butter
1 lg. can peach halves
1 c. whipping cream
2 well beaten egg yolks

Crush vanilla wafers and form into a 9 inch pie crust. (Save a portion of crumbs to sprinkle on top.)

Cream 1 cup powdered sugar with 1/4 cup butter. Add the egg yolks. Spread this on the crust.

Place 6 peach halves, round side up, on the creamed mixture close to edge of pie pan. (So each slice will have a peach.)

Whip the 1 cup cream and sweeten with 1 tablespoon powdered sugar. Spread over peaches. Top with remaining crumbs. Refrigerate for 24 hours before serving.

You may want to use butter for wafers. Without butter the crust is very crumbly.
