OATMEAL WAFFLES 
1 1/2 c. all-purpose flour
1 c. quick cooking oats
1 tbsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt (optional)
2 eggs, slightly beaten
1 1/2 c. milk
6 tbsp. butter, melted
2 tbsp. brown sugar

In large mixing bowl stir together flour, oats, baking powder, cinnamon and salt. Set aside.

In small mixing bowl stir together eggs, milk, butter and brown sugar. Add to flour mixture. Stir until blended. Pour batter onto grids of preheated lightly greased waffle iron (amount with vary according to size of waffle iron). Close lid quickly, don't open during baking. Use fork to remove baked waffle. Makes 12 waffles.

Serving Suggestions: Top with fresh fruit and yogurt. Strawberry jam and sour cream. Your favorite syrup maple, cherry, berry, etc. Add 1 teaspoon grated orange rind to batter and top with orange sauce. (Combine 1 tablespoon cornstarch and 1 cup cold orange juice. Bring to boil over medium heat and boil 1 minute, stirring constantly. Remove from heat and stir in 1 tablespoon butter.) Serve warm.
