1 c. sour milk 1 tsp. baking soda 2/3 c. sugar 1/3 c. flour 1 1/3 c. corn meal (yellow 1/4 tsp. salt 2 eggs, well beaten 2 tbsp. shortening 1 c. sweet milk Grease a heavy iron skillet and place it in oven as it heats. Sift dry ingredients together. Add beaten eggs and sour milk with baking soda in it and shortening. Mix together and pour into sizzling hot skillet. Place on oven shelf and add the cup of sweet milk gently. Pour it on a wooden spoon and move the spoon over the surface to soften the splash. Do not stir. Bake - do not overcook. It will be crisp cooked on edges and have a custard like center. Cut in pie shaped wedges to serve. Good with Corn Chowder. This was my Mother's recipe. |
