POLYNESIAN BARS 
3 c. chopped dates
2 c. crushed pineapple, undrained
3/4 c. water
1 tsp. vanilla
3/4 c. whole wheat flour
3/4 c. unbleached flour
1 1/2 c. oatmeal
1/2 c. coconut
1/2 c. chopped nuts
3/4 c. soft butter

1. Put the dates, pineapple, water and vanilla in a kettle.

2. Mix together and cook until thickened. Set aside.

3. In a bowl mix the flours and oatmeal, coconut and nuts.

4. Add to the flour mixture the butter. Mix with hand until well blended.

5. Put half of the mixture in bottom of 12 x 7 1/2 x 2 inch pan. Press firmly.

6. Spread the date mixture over, then sprinkle the rest of the flour mixture on top.

7. Bake at 350 degrees for 1/2 hour.
