2 to 3 c. egg noodles (uncooked) 1/2 c. butter 1 c. whipping cream 1/4 c. freshly grated Parmesan cheese (additional cheese, if desired) salt and pepper to taste Melt butter in large skillet. When butter foams, add cream. Simmer over medium heat about 2 minutes until slightly thickened. Season with salt and pepper. Fill a very large saucepan 2/3 full with salted water. Bring to boil. Add noodles. Cook, uncovered, until tender, but firm to the bite. Drain. Place in skillet with cream. Add 1/4 cup Parmesan cheese. Toss noodles and sauce over medium heat until sauce coats noodles, 20 to 30 seconds. Serve with additional cheese, if desired. Serves 4 to 6. |
