BACON AND MUSHROOM STUFFING 
6 oz. bacon
18 oz. mushrooms
2 lg. onions
2 cloves garlic
1 c. giblet stock or water
1/4 c. parsley, chopped
12 oz. fresh bread crumbs
1 egg
Salt and pepper to taste

Cut bacon into small pieces and cook gently. Add sliced mushrooms and chopped onions and cook quickly for 5 minutes. Add stock or water and cook gently for 5 more minutes. Remove from the heat and stir in the parsley, crumbs, salt, pepper and egg. This recipe makes enough for a 20 pound turkey with enough leftover to bake separately for extras.
