CHICKEN BARLEY PILAF 
1/2 c. diced finely chicken
1 1/3 c. chicken broth
1/2 c. quick pearled barley
2 tbsp. onion, chopped
2 tbsp. green pepper, chopped
1/2 c. celery, diced
1 tsp. dried parsley
1 tbsp. butter

Heat broth and butter to boiling. Place all other ingredients in casserole and pour broth over ingredients. Bake uncovered 1 hour at 350 degrees. Stir 1/2 way through baking time. Last 5 minutes of baking sprinkle 1/4 cup Parmesan cheese on top and return to oven.
