CHILI RELLENO CASSEROLE 
6 eggs, beaten
3 c. (24 oz.) cottage cheese
3/4 c. finely crushed Ritz crackers
1 (4 oz.) can Ortega chilies, drained and chopped
3/4 c. cheddar cheese, shredded
3/4 c. Jack cheese, shredded

Combine eggs, cottage cheese, cracker crumbs and chilies and half the cheeses. Pour into 10 x 6 x 2 baking dish. Bake in 350 degree oven, 45 minutes or until set. Remove from oven. Sprinkle remaining cheese over top. Bake 2 or 3 minutes more.
