CHICKEN PUFFS 
Puffs:

1/2 c. butter
1 c. all purpose flour
4 eggs
1 c. shredded Swiss cheese
1 c. water
Salt

Melt butter in 1 cup boiling water. Add flour and salt, stir vigorously. Cook and stir until mixture forms a ball that does not separate. Remove from heat and let cool slightly. Add eggs and beat vigorously until smooth. stir in cheese. Drop dough onto greased baking sheet using 1 level teaspoon for each puff. Bake at 400 teaspoon for about 20 minutes. Remove puffs from oven, cool and split.

Stuffing:

2 c. finely chopped cooked chicken
1/2 c. finely chopped celery
1/4 c. chopped pimento
1/4 c. mayonnaise
1/2 tsp. salt
Dash pepper

Combine all ingredients. Fill each puff with 2 teaspoon of mixture.
