SPANISH RICE WITH FRESH TOMATOES 
1 c. rice
3-4 sliced onions (cut into sm. pieces)
1 tbsp. butter or olive oil

Cook rice in oil, medium flame, and brown, stirring constantly. Stir in onion slices. Pepper to taste.

Bring to boil, then turn down and simmer.

Steam rice slowly, until water is gone. Leave a little juice as you shut off.
