EGGPLANT BOMBAY 
1 med. eggplant
1 c. seasoned bread crumbs or crushed seasoned stuffing or crouton mix
1 egg
1 can mushroom soup
1 c. diced onions, or sm. onions cut in rings
1 c. grated sharp cheddar cheese

Pare and cube eggplant, boil until tender; drain and cool. Combine eggplant with other ingredients. Add a little water if mixture is too thick. It ought to be about the consistency of stuffing. Put mixture in baking dish. Cover with grated cheese. Bake at 350 degrees for about 40 minutes or until onions are done.
