CRABMEAT AU GRATIN 
1 stalk celery
1 c. finely chopped onion
1/4 lb. butter
1/2 c. flour
1 lg. can Pet milk (13 oz.)
2 egg yolks
1 tsp. salt
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
1 lb. crab meat
1/2 lb. grated Cheddar cheese

Saute onions and celery in butter until wilted. Blend flour well in this mixture. Pour in milk gradually, stirring constantly and add egg yolks, salt and pepper. Cook 5 minutes.

Put crabmeat in bowl and pour cooked sauce over crabmeat, blend well, then transfer to lightly greased casserole and sprinkle with grated cheese. Bake at 375 degrees for 10 to 15 minutes or until light brown.
