APPLESAUCE PUDDING | |
3 c. applesauce 1 c. sugar 1 tsp. grated lemon rind 1 tsp. lemon juice 2 tsp. vanilla 3 egg yolks 3 egg whites 1/8 tsp. salt 9 maraschino cherries Mix together applesauce, 2/3 cup sugar, lemon rind, lemon juice and 1 teaspoon vanilla. Beat egg yolks into applesauce mixture. Pour into 8 inch square baking pan. Beat egg whites until fluffy. Add salt and beat until stiff but not dry. Gradually beat in 1/3 cup sugar until egg whites stand in peaks. Beat in 1 teaspoon vanilla. Arrange meringue in 9 mounds on top of applesauce mixture. Bake in slow oven (300 degrees) about 15 minutes or until meringue is slightly browned. Garnish with maraschino cherries. Serve wither hot or cold. Serves 9. |
