6 lbs. oranges sliced thin and seeded 6 qts. water 1 1/2 lbs. sugar for every lb. pulp Put sliced oranges in large bowl; cover with water and soak for a day. Then boil until rinds are transparent. Let stand another day. Weigh and add 1 1/2 pounds sugar for every pound of pulp. Mix and boil again until clear. Test for setting by putting a small spoonful on a cold plate, letting it cool and seeing if it stays stiff when you turn the plate sideways. Pour into warmed jars. Cover when cool. |
