ZUCCHINI PIE 
3 c. zucchini, thinly sliced
2 med. onions, thinly sliced
1 c. Bisquick
1/2 c. oil
1/2 c. grated cheese
4 well beaten eggs
Parsley

Butter the bottom of a 9 x 2 inch round pan. Beat eggs. Combine with Bisquick, oil and cheese. Add zucchini and onions. Sprinkle with parsley. Bake at 325 degrees for 1/2 hour.
