LOUISIANA RED BEANS AND RICE 
1/2 lb. dry red beans
4 c. water
1/4 lb. salt pork, diced
1 c. diced onion
1 c. finely chopped celery
2 tbsp. snipped parsley
1/4 - 1/2 tsp. crushed red pepper
1 clove garlic, minced
1 bay leaf
Hot cooked rice

Rinse beans. Place in large pot. Add water. Bring to boil. Reduce heat and simmer 2 minutes. Remove from heat. Cover. Let stand 1 hour. Add pork, onion, celery, parsley, red pepper, garlic and bay leaf. Bring to boil. Cover. Simmer 1 hour and 45 minutes. Remove bay leaf. Serve over hot cooked rice.
