PINEAPPLE CARROT PRESERVES 
4 c. undrained crushed pineapple
Rind of one orange slivered
Rind of one lemon slivered
3 carrots, coarsely shredded
3 c. sugar

In a 2 quart saucepan combine all ingredients, and simmer stirring occasionally, until thick, about 20 to 25 minutes. Spoon while hot into sterilized jars, seal and cool. To present as a gift, add pretty labels, and a dish and silver spoon for serving. Makes 4 pints.
