FRESH PEAR CAKE | |
4 c. fresh, soft pears 2 c. sugar 1 c. chopped pecans 3 c. flour 1/2 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking soda 1 c. vegetable oil 1 tsp. vanilla 2 well beaten eggs Preheat oven to 275 degrees. Have eggs at room temperature. Peel and slice or chop pears real thin. Mix with sugar and nuts. Let stand 1 hour, stirring often. Add dry ingredients to pear mixture. Add oil, vanilla and beaten eggs. Mix by hand. Pour batter into greased 13"x9" pan. Bake for 1 hour or until done in center. |
