FRESH PEAR CAKE 
4 c. fresh pears, diced
2 c. sugar
1 c. chopped nuts
2 well beaten eggs
4 c. flour, sifted
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 c. vegetable oil
1 tsp. vanilla

Preheat oven to 350 degrees. Pare, core and dice pears. Mix with the 2 cups sugar and nuts. Let stand for 1 hour, stirring the mixture often so that it makes its own juice. Add dry ingredients to pear mixture. Add oil, eggs and vanilla. Stir by hand. Pour batter into greased and floured bundt or tube pan. Bake for 1 hour and 15 minutes. Let stand in pan for 15 minutes.
