RICE CON QUESO 
1 1/2 c. rice, cooked
2 c. dry beans, cooked (any kind)
1/2 c. salsa
3 cloves garlic
1 c. chopped onion
1 pt. cottage cheese
1 lb. grated cheese

Mash and mix rice, beans, salsa, garlic, and onions. Put a layer in a 9 x 13 pan. cover with a layer of cottage cheese and 1/2 of grated cheese.

Add another layer of bean-rice mix. Bake 1/2 hour at 350 degrees. Put cheese on top. Heat until melted.
