MINIATURE CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. vanilla or almond extract
1 tsp. lemon juice
Vanilla wafers
Paper muffin liners
Cool Whip
Cherries and/or nuts

Mix all ingredients together, except vanilla wafers. Beat with electric mixer until smooth. Line muffin tins with paper liners and place, flat side down, a wafer in each one. Fill with cream cheese mixture. Bake at 375 degrees for 15-20 minutes. Cool. Cover with Cool Whip and decorate with cherries, nuts, etc. Refrigerate.
