EGGPLANT BEIGNETS 
3 med. size eggplant
1/4 c. sugar (or use Sweet-Low to taste)
1 egg
1-1 1/2 c. Bisquick (or flour, plus 1 tsp. baking powder, pinch salt)
Deep fat for frying

Peel eggplants; boil until tender. Mash well. Add sugar or Sweet- Low; let cool. Add egg and Bisquick (or flour, baking powder, salt mixture) until stiff enough to drop by spoonfuls into deep hot fat. Fry until golden brown; drain on brown paper. Serve hot.
