JOANNE'S BEEF STEW | |
3 lbs. meat 2 lg. onions, sliced 1 box sm. sweet peas 4 c. beef broth 2 tsp. mustard (Dijon) 3 carrots, sliced 2 stalks celery, sliced 3 potatoes, cubed 2 tsp. tomato paste Brown floured meat in 1/3 cup oil. Pour oil off except 1 teaspoon. After removing browned meat from pot, add potatoes, carrots, celery, and onions; stir until brown. Add 4 cups beef broth. Add meat and 2 teaspoons Dijon mustard and 2 teaspoons tomato paste. Simmer, covered, for 1 hour. Check for seasoning and cook another hour. Add peas when almost ready to serve. |
