OATMEAL DATE COOKIES 
1 c. shortening
2/3 c. sugar
2/3 c. packed brown sugar
2 eggs
1 tsp. vanilla
8 oz. chopped dates
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. regular oats, uncooked

Cream shortening; gradually add the sugar, beating well. Add eggs and vanilla; beat well. Combine flour, salt and soda; add to creamed mixture, mixing well. Stir in the uncooked oats and chopped dates. Drop dough by rounded teaspoon onto lightly greased cookie sheets. Bake at 350 degrees for 10-12 minutes. Centers will be slightly soft. Remove from cookie sheets while they are warm. Complete cooling on wire racks. Yield: about 5 1/2 dozen.
