ITALIAN BONELESS CHICKEN 
6 beaten eggs or egg substitute
1 c. grated Parmesan cheese
1/2 c. dry bread crumbs
4 c. finely chopped cooked chicken
3 tbsp. butter
1/2 c. chopped green pepper
1 tbsp. oil
2 (15 oz.) cans tomato sauce
1 tsp. sugar
1/2 tsp. Italian seasoning
1/2 tsp. dried basil, crushed
1/2 tsp. garlic powder
2 c. shredded Mozzarella cheese

Combine eggs, Parmesan and crumbs. Stir in chicken; mix well. Shape mixture into 8 patties. In large skillet, cook patties in butter for 2-3 minutes per side or until browned. Drain and place into baking dish.

Cook green pepper and onion in hot oil until tender. Remove form heat and add 1/2 cup water and remaining ingredients except Mozzarella. Spoon sauce over patties; sprinkle with Mozzarella.

Bake uncovered in 350 degree oven for 25 minutes.
