SQUASH CASSEROLE 
2 c. cooked and drained squash (seasoned to taste)
1 c. chopped onion
1 c. cubed cheese (type of your choice)
2 c. crushed Ritz crackers

Blend all ingredients together. Bake in 1 quart casserole dish at 350 degrees for 30-35 minutes or until cheese is thoroughly melted.
