SOUTHERN SWEET POTATO PIE 
2 1/4 c. cooked, strained, sweet potatoes
3/4 c. sugar
2 eggs
1 stick butter, melted
1 tbsp. lemon flavoring
1/2 c. milk (or a little more)
1 (9") pie shell

Boil potatoes until tender, peel and mash; strain through a sieve. Add all other ingredients, mix well. Pour into a 9" pie shell. Bake at 350 degrees for 35 minutes until done. Serves 6.
