SWEET POTATO PIE 
1 1/2 c. mashed sweet potatoes
1 stick butter, melted
1 1/2 c. sugar
3 tbsp. flour
2 eggs
1 tsp. vanilla
1 (9 inch) pie crust, unbaked

Preheat oven to 375 degrees.

MERINGUE:

4 egg whites
1 1/2 tsp. sugar
1 tsp. vanilla

Meringue: Blend all ingredients together until peaks form.

Combine all ingredients; mix well. Pour in 9 inch pie crust. Bake at 375 degrees for 45 minutes. Cool. Top with meringue and brown lightly.

Note: If you use fresh sweet potatoes, precook first.
