3 eggs
1 c. sugar
1 c. cooked sweet potatoes, mashed
3/4 c. evaporated milk
1/4 c. milk
1/4 c. butter, melted
2 tsp. vanilla
10" pie shell, unbaked

Preheat oven to 400 degrees. Beat together eggs, sugar and sweet potatoes. Add milk, butter and vanilla. Pour into pie shell and bake at 400 degrees for 10 minutes, then turn oven down to 325 degrees and bake for 30 minutes or until knife inserted comes out clean.
