SWEET POTATO PIE 
3 to 4 lg. sweet potatoes
1/2 c. butter, melted
3 eggs
2 1/2 c. sugar
1 tsp. vanilla
Nutmeg to taste
Refrigerated pastry dough for single-layer pie

Boil sweet potatoes in water until tender. Drain, peel and mash.

Beat together melted butter, eggs and sugar. Stir in vanilla and nutmeg to taste.

Stir mixture into cooked and mashed sweet potatoes.

Line a 9 inch pie pan with pastry crust. Spoon potato mixture into crust. Bake in a 400 degree oven 35 to 45 minutes, or until a knife inserted in the center comes out clean.
