SPINACH - MUSHROOM BAKE 
3 pkgs. frozen chopped spinach (10 oz.)
2 c. chopped fresh mushrooms
1/4 c. butter
1 c. Parmesan cheese
3/4 c. sour cream
3/4 c. whipping cream
1 tbsp. minced onion
1 tsp. horseradish
1 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. pepper
Cherry tomatoes
1/3 c. Parmesan cheese

Cook spinach according to directions and drain well. Saute mushrooms in butter (about 5 to 7 minutes). Combine spinach, mushrooms, cheese, sour cream, whipping cream, onion, horseradish, nutmeg, salt and pepper in a large bowl until well mixed.

Spread spinach mixture in buttered 13 x 9 x 1 1/2 inch baking dish. Sprinkle with 1/3 cup cheese. Bake 15 minutes at 350 degrees and garnish with tomatoes. Bake until set about 10 minutes. 8 servings.
