SPINACH - MUSHROOM BAKE 
5 (10 oz.) pkg. frozen, chopped spinach
2 c. chopped mushrooms
1 c. grated Parmesan
3/4 c. whipping cream
1 tbsp. dried minced onion
1/2 tsp. salt
1/4 tsp. pepper
Cherry tomatoes
1/4 c. butter
3/4 c. sour cream
1 tsp. horseradish
1 tsp. grated nutmeg
1/3 c. Parmesan cheese

Heat oven to 350 degrees. Cook spinach according to package directions, drain in large sieve. Saute mushrooms in butter over medium heat until soft. Combine spinach, mushrooms, 1 cup cheese, sour cream, whipped cream, onion, horseradish, nutmeg, salt, and pepper in large bowl until well mixed. Spread mixture in buttered 13 x 9 x 2 baking dish; sprinkle with 1/3 cup Parmesan cheese. Bake 15 minutes. Garnish with tomatoes, bake until set, about 10 minutes.
