POLISH POTATOES 
3 large potatoes, pared, cooked and sliced
1 onion, chopped
4 tbsp. (1/2 stick) butter
2 eggs
1 cup dairy sour cream
1/4 cup milk
salt and pepper, to taste
1/3 cup soft bread crumbs
1/4 cup grated Parmesan cheese

Preheat oven to 400°F.

Layer sliced potatoes in a greased baking dish. Sauté onion in butter and add to potatoes. Beat eggs, dairy sour cream and milk to blend well. Season with salt and pepper. Pour over potatoes. Combine bread crumbs with cheese and sprinkle over top.

Bake at 400°F for 20 minutes or until top is browned.

Serves 6.
