PIEROGI LASAGNE 
Cook 1 box lasagne noodles. Pare and dice 3-4 medium potatoes as for mashed potatoes. Cook and mash with 2-3 tablespoons butter and 1/4 cup grated Cheddar cheese. Shred 1/2 medium head of cabbage. Dice 1 medium onion and fry with cabbage and 3-4 tablespoons butter.

Mix together 20 oz. Ricotta cheese, 1/2 cup grated Mozzarella cheese, 1 egg, 1/2 cup dry bread crumbs, and 2 teaspoons parsley flakes.

In a 9x13 inch pan, melt 2 tablespoons butter. Lay a layer of noodles in bottom of pan. Layer of potatoes, layer of noodles, layer of cabbage, layer of noodles, layer of cheese filling, layer of noodles on top. Brown 1 cup of onions and 1/4 pound butter. Pour over lasagne. Cover with foil. Bake at 350 degrees for 30 minutes.
