MINI CHEESECAKES 
2 (8 oz.) cream cheese
3/4 c. sugar
2 eggs
1 tbsp. vanilla

Mix all ingredients. Put 1 vanilla cookie in each 2 inch foil cupcake paper. Spoon cream cheese mixture on top of wafer. Bake at 375 degrees for 10 to 12 minutes. Cool before topping with pie filling (cherry, blueberry, etc.). Chill before eating. Can be frozen. Makes approximately 2 dozen cheesecakes.
