CHICKEN CUTLETS ALA FERRERA 
1 lb. skinless, boneless chicken breasts, pounded thin
1 egg, lightly beaten
2-3 garlic cloves, minced
1 1/2 c. Italian bread crumbs
1/2 c. Parmesan cheese
1/4 c. olive oil

In a bowl, add beaten eggs and garlic. Dip chicken breasts in egg mixture. Then roll chicken in Parmesan cheese and bread crumb mixture. Cook chicken in skillet containing olive oil. Cook for about 2-3 minutes per sides over medium high heat, adding more oil if necessary. Excellent when served with pasta and tomato sauce.
