CAULIFLOWER WITH CHEESE SAUCE 
1 tsp. salt, divided
1 head cauliflower, broken into flowerets
2 tbsp. butter
2 tbsp. all-purpose flour
Dash of pepper
Dash of paprika
1 c. milk
1 c. shredded Cheddar cheese
Parsley sprigs, optional

Bring 1 inch of water to a boil with 1/2 teaspoon salt in a medium saucepan; add cauliflower. Cover and cook 8-10 minutes, until crisp tender. Drain and keep warm. Melt butter in small saucepan over medium heat; add flour, 1/2 teaspoon salt, pepper and paprika if desired. Cook and stir 3 minutes or until bubbly. Gradually stir in milk; cook, stirring constantly until smooth and thickened. Add cheese and stir until melted. Arrange cauliflower on a platter and spoon cheese sauce over top. Garnish with parsley if desired. Yield 6-8 servings.
