ICE BOX ROLLS 
1 c. mashed potatoes
2/3 c. sugar
1 tbsp. salt
2/3 c. shortening
2 c. scalded milk
2 eggs
1 pkg. yeast dissolved in 1/4 c. lukewarm water and 1/2 tsp. sugar
All-purpose flour

Cook potatoes and mash. Put in a large bowl. Add sugar and salt. Add milk and melted shortening. When cool, add eggs and yeast. Stir in enough flour to make a soft dough. Place dough in lightly greased bowl, cover and let rise in a warm place until about doubled in size. Punch down with fingers and form into a small ball.

Grease the top of ball, cover and put into the refrigerator. Punch down occasionally. About 2 hours before baking, shape into rolls and bake in oven at 400 degrees until brown, then brush with melted butter. Makes about 2 1/2 dozen rolls.
