PINEAPPLE UPSIDE DOWN CAKE 
2 tbsp. butter
1/2 c. brown sugar
4 slices pineapple, drained
1/4 c. pineapple juice
1 1/4 c. cake flour
2 tsp. baking powder
1/2 tsp. salt
1/3 c. butter
1/2 c. sugar
1 egg, unbeaten
1/2 c. milk
1/2 tsp. vanilla

Melt butter in 8 x 8 inch pan, sprinkle with sugar and pour pineapple juice, arrange pineapple slices. Sift dry ingredients together. Set aside, cream butter and add sugar gradually, creaming well, add unbeaten egg and beat well. Combine milk and vanilla add alternately with dry ingredients to creamed mixture. Blend well after each addition. Pour over pineapple, bake in moderate oven 375 degrees for 45 minutes. Let stand for 5 minutes, turn upside.
