CORNED BEEF 
3 lbs. beef (roast or brisket)
4 tbsp. brown sugar
3 tsp. salt
1/2 tsp. salt peter

Add all ingredients and mix, add water to cover. Place in refrigerator for 4 days turning each day. Cook in pot with water the meat has soaked in for 5 minutes. Take scum off top. Continue cooking one hour for each pound until done.
