DORA'S DANDELIONS | |
Dandelions are a healthy wonderful way to ring in the spring. Store bought dandelions just aren't as good. Make sure to get them early in the spring (before they bloom) for the tenderest greens! All I can say about this recipe is... Thanks Gramma Hubble! 1 lb. diced bacon 1 medium diced onion 1 large bowl of fresh young dandelions 1 (5 lb.) bag white potatoes, peeled and chunked up SAUCE: reserved bacon grease 1 egg, beaten 1/2 cup vinegar 1 tbsp. sugar 1 tbsp. all-purpose flour salt and pepper, to taste Peel and chunk up potatoes and start boiling them. Fry diced bacon until crisp. Pour off excess grease and reserve to the side. Chop fresh dandelions (yes, the little flower buds are edible) and onion, toss gently in a large bowl. You can always add more onion if you desire. For the sauce, take the reserved grease and put it back in the dish you cooked the bacon in. Stir in 1 beaten egg, salt and pepper to taste, 1/2 cup vinegar. Stir continuously, add 1 tablespoon sugar. Add fried bacon and 1 tablespoon flour, stir until thickened to consistency of salad dressing. Pour sauce over dandelions and onions and toss. Serve over buttered boiled potatoes!
