CALICO BEAN SOUP | |
1 lb. calico beans 1 clove garlic 1 c. tomatoes 1/4 tsp. pepper 1 ham hock or 1 lb. sausage 1 med. onion, chopped 2/3 c. cooking sherry (optional) 4 c. water 1 tsp. salt 2 tbsp. parsley 1 sm. bay leaf Soak the beans overnight; drain. Add all ingredients except sherry. Cook 2-3 hours. Add sherry. Cook until beans are tender. Garnish with grated cheddar cheese, sour cream, and chopped onion. |
