OATMEAL COCONUT CRISPS | |
2 c. butter 2 c. sugar 4 eggs 2 tsp. salt 6 c. oatmeal (quick) 2 c. brown sugar 2 tsp. vanilla 3 c. sifted flour (plain) 2 tsp. baking soda 1 1/2 c. flaked coconut Cream together butter and brown sugar and white sugar until fluffy. Stir in vanilla, then add eggs one at a time beating after each addition. Sift together flour, salt and baking soda. Add to creamed mixture. Stir in oatmeal and coconut. Drop by teaspoonfuls about 2 inches apart on greased baking sheet. Bake at 350 degrees for 10 to 15 minutes. Cool on rack. Makes 14 dozen. Will keep in refrigerator several days, covered. |
